Bridget's Baked Berry Oatmeal // Tales of Me and the Husband



Nursing mothers are two things. Busty and hungry. So, to Blair's visitors: bring her this. It's sort of the perfect breakfast and doesn't break any of those rules of things you're not supposed to have while nursing. Moooostly. Okay, there is a little bit of dairy and eggs. But barely! It warms up nicely too. And it's delicious.



baked berry oatmeal
serves 6-8

2 1/2 cups regular rolled oats
1/2 cup steel cut oats
2 tsp baking powder
1/2 t salt
1/2 t ground cinnamon
2 cups milk
1 egg beaten
1/3 cup applesauce
1/2 cup oil (i used coconut oil)
1/4 cup honey
1/4 cup brown sugar
2 cups fresh or frozen strawberries

for garnish 
(and one of the best parts in my opinion--don't skip it!)
strawberry jam, warmed
plain yogurt, greek or regular

preheat oven to 400 degrees.  in large bowl, stir together rolled oats, steel cut, baking powder, salt, and cinnamon.  set aside.  in medium bowl combine milk, egg, apple sauce, oil, honey, and brown sugar.  add to oat mixture and stir until combined.  it'll be really wet but will become much more casserole-like in the oven.  pour into greased 2-quart souffle or casserole dish.  bake for 20 minutes.  remove from oven, stir mixture, and mix in berries.  bake for another 20 minutes or until lightly browned.  spoon into bowls.  serve with a dollop of yogurt and warm jam on top (mixed together). 

it's pretty hearty and stays with you for awhile too.  thanks steel cut oats!
