Kitchen Adventures {craklin' oat bran muffins}


The ingredients:
3 cups Cracklin' Oat Bran
1 cup Pineapple Juice {or water}
2 eggs
1 cup sugar
1 cup packed brown sugar
2 cups butter milk
2 cups all-purpose flour
3/4 cup oil
3 teaspoons baking soda


*Pre-Heat Oven to 375degrees

*place oat bran and pineapple juice in medium sized sauce pan and bring to a boil to soften
(you'll be amazed by how fast it turns into a yummy mush)


*mix together the rest of the ingredients while cereal is on the stove

*stir in softened oat bran


*grease pans or use paper liners

*cook 20-30 minutes


*don't let a beautiful light brown color deceive you, these are supposed to come out pretty dark -- if you go by the standard gold color, you will have a very gooey center

  
*yum yum eat up!

This recipe was given to me via my Auntie Marylin & if she didn't live way out on the west coast, I would run over and give her a million hugs for them! These are seriously so good and so easy.  

I can't wait to make them again and try some different variations to make them just a tiny bit healthier.  Since I rarely have pineapple juice around the house (although water will always work), I am going to try orange juice!  I'm also going to try substituting some of the oil with apple sauce and want to experiment using a wheat flour/all purpose flour mixture.

One last piece of advice that was handed down with the recipe and so I pass on to you -- 
"Don't eat more than 2 a day..."

  6. These look so tasty and I love an easy recipe...thanks so much for sharing! Love the idea of substituting different citrus juices too...I'm sure they are all lovely, and I'll be sure not to intake more than two a day! ;)
