Just like momma's cookin' ??

{mom's chocolate chip cookies}

David's mom makes the BEST chocolate chip cookies! I thought I would try my hand.  I knew I would inevitably come up short... and alas, I did.  I was just missing some sort of magic.  I mean, these taste good -- but they are just.. missing something!  Wrong color, wrong consistency... but, nonetheless delicious!

The recipe is a very modified and perfected version of the classic Toll House recipe.  The edits are in purple:

2 1/4 cups all-purpose flour
        *use a little less
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) butter, softened
*use instead 1 stick butter and 1 cup shortening
3/4 cup granulated suger
        *use 1/2 cup instead
3/4 cup packed brown sugar
        *use 1 full cup instead
1 teaspoon vanilla extract
*don't skimp! a little extra is best
2 large eggs
12 oz. pkg. of chocolate ships

PREHEAT oven to 375° F.

COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
*be careful not to over stir

BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
*the key is to undercook these so they stay chewy.  when you take cookies out of the oven slam the the try on the counter so that the dough falls.

I kept these pretty bite size and used mini chocolate chips.  They aren't as super yummy as my mom-in-laws.  But they are yum!

Y'all have any secrets to the perfect cookies?
