Perfect Summer Treat

Our sweet friends Melissa & Scott shared their Watermelon Mint Sorbet with us last week. It was so good I thought I was in heaven. I stole their recipe & turned them into popsicles. It was super easy.

Ingredients:
1/2 a seedless Watermelon - cubed
1/2 cup water
1/2 cup sugar
Handful of mint
Fresh lemon juice
Salt

How to:
Make a simple syrup by adding 1/2 cup of sugar to 1/2 cup of boiling water. Once dissolved, roll a generous handful of mint between your fingers (it wakes up the oils) and add to syrup to steep. Remove from heat and cover for 10 minutes. Strain syrup through sieve, mushing all extra moisture from the leaves and allow to cool.

Puree cubed watermelon and mint syrup. Don't be scared -- but the syrup will be green. Experiment with how much syrup you want to add -- depends on how sweet or minty you prefer. To bring out flavors, add 2 pinches of salt and squeeze in half a lemon. Once pureed, immediately pour into molds & freeze.

We bought some cheap molds from Wal-mart & also poured the mixture into glasses. I'm kinda digging how easy making good/healthy/cheap popsicles is. I think I'd like to buy a better mold -- I'm really digging these.

  15. Wow those look good! I've been having a great time making homemade pops this summer. I have the rocket-shaped and star-shaped tovolo molds, and they are great. We've been sticking mostly to yogurt/fruit combos, but I love this idea!

    The lemon-yogurt-raspberries are my fave so far, although this week I did a variation on the strawberry-yogurt by adding blueberries and raspberries. SO good!

  17. Oh, yum! And I love the addition of the mint, how refreshing! I haven't done popsicles but I'm big on spa water in summer - lemons, cucumbers and mint, steeped in distilled water and chilled! XO!
